Flowerpot filled with mousse of white chocolate flowers

Edible "flowerpot" filled with flowers made from a white chocolate mousse and an Italian meringue.

Ingredients

140gEgg white
zest of 1 lime
280gSugar
flower stencil
50gWater
yellow food coloring

7gAgar
400gWhipped cream
35gEgg yolk
125gMilk
170gWhite chocolate

Preparation

  1. Put 200 grams of sugar and the water in a saucepan and bring to 121°C.
  2. Whip the egg white with the remaining 80 grams of sugar until light and airy.
  3. While mixing, slowly add the sugar mixture.
  4. Add the lime zest.
  5. Take 6 tablespoons from the bowl and put them in another bowl.
  6. Add a little yellow food coloring and put this in a piping bag.
  7. Put the remaining meringue in a piping bag as well.

  1. Spread the Italian meringue on a template.
  2. Pipe a small yellow dot of yellow meringue in the center.
  3. Insert a skewer and let dry in a (dry) oven.

  1. Place the Oreo cookies on a cutting board and chop them into coarse crumbs.
  2. Spoon a little onto the white chocolate mousse.
  3. Insert the dried flowers into the mousse.

  1. Spread the Italian meringue on a stencil.
  2. Pipe a small yellow dot of yellow meringue in the center.
  3. Insert a skewer and let dry in a (dry) oven.
