Preparation

Fillet the turbot and fry the bones whole in a pan until golden brown.
Add the butter and chopped parsley at the end and heat briefly.
Cut the little gem in half lengthwise and fry in the butter.
Serve with the turbot, remoulade sauce, and thick fries.
