Bourekas with 'new' meat

This dish combines the classic flavor of bourekas with a modern twist by using alternative meat.

Ingredients

Olive oil
200gCherry tomatoes
150gOnion
9chopped parsley
2.5Garlic
1.5Salt
Black pepper
1units.itemspack of filo pastry
250gRedefine minced beef
2pine nuts
Baharat
Sesame seeds

Preparation

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Chop the onion and finely chop the garlic.
  3. Sauté the onion until it is soft and golden brown.
  4. Add the garlic and fry for a minute until the aromas are released.
  5. Quarter the cherry tomatoes and cook them in the pan until they soften. Keep stirring. Do this for about 10 minutes.
  6. Add the thawed Redefine Minced Beef and fry over high heat.
  7. Break up the 'meat' as it cooks.
  8. Add the chopped parsley, pine nuts, and herbs as soon as the Redefine Minced Beef starts to brown a little.
  9. Mix the ingredients well and cook for another 5 minutes.
  10. Remove the pan from the heat and let the filling cool.
  11. Place the cooled filling in a fine sieve and let all the liquid drain out. This ensures the dough does not become soggy.
  12. Preheat the oven to 190°C.
  13. Place a sheet of filo pastry on a work surface and brush it with olive oil.
  14. Place another sheet on top and brush this one with oil as well.
  15. Spoon a layer of filling in a line along the long edge of the filo sheets.
  16. Carefully roll up the double layer of dough into a tight roll. Cut the roll in half.
  17. Place the two pieces on a baking tray lined with baking paper.
  18. Repeat this process with the remaining filo sheets until all the filling is used up.
  19. Brush the bourekas generously with olive oil and sprinkle with sesame seeds.
  20. Bake the dish in the oven for 30 minutes or until the pastry is golden brown.
  21. Remove the bourekas from the oven and serve the dish.
