Camembert panna cotta and cranberry gel

A surprising twist on a classic dessert: creamy camembert panna cotta with a fresh cranberry gel and a subtle accent of pomegranate powder.

Ingredients

100gCamembert
300gWhole milk
600gQimiQ

3gAgar
Olive oil
500mlCranberry juice
Honey
Cinnamon berries

Pomegranate powder
Pomegranate seeds

Preparation

  1. Loosen the QimiQ 

  1. Mix the cranberry juice with the agar, honey, and cassia berries.
  2. Heat the mixture in a pan and bring to a boil.
  3. Blend well with an immersion blender and strain.
  4. Pour into a container and let set completely in the refrigerator.
  5. Blend the jelly smooth and add a little olive oil if desired for extra creaminess.
  6. Use as a gel for piping.

  1. Serve with pomegranate powder and seeds.
