
Chili mousseline
Creamy mousseline with lemon, chili oil, and sushi vinegar. 60gLemon juice
200gButter
5Egg yolks
30gWater
50gChili oil
10gSushi vinegar
Preparation
- Whisk the egg yolks, lemon juice, water, and a pinch of salt in a pan over low heat until you have a smooth sauce.
- Remove the pan from the heat as soon as the sauce is smooth and well combined.
- Then gradually add the butter and chili oil, continuing to whisk until you have a smooth, creamy mousseline.
- Finish with the sushi vinegar and a pinch of salt to taste.
