Chili mousseline

Creamy mousseline with lemon, chili oil, and sushi vinegar. Spicy, fresh, and perfect as a warm sauce for fish or vegetables.Grønn oils are responsible, zero-waste, ready-to-use oils from Benoit Dewitte. Ingredients

Salt
60gLemon juice
200gButter
5Egg yolks
30gWater
50gChili oil
10gSushi vinegar

Preparation

  1. Whisk the egg yolks, lemon juice, water, and a pinch of salt in a pan over low heat until you have a smooth sauce.
  2. Remove the pan from the heat as soon as the sauce is smooth and well combined.
  3. Then gradually add the butter and chili oil, continuing to whisk until you have a smooth, creamy mousseline.
  4. Finish with the sushi vinegar and a pinch of salt to taste.
