Buttermilk juice

Creamy jus based on buttermilk, mussel jus and dill, lightly whipped with butter, dill oil and sushi vinegar. Fresh and full of flavor.Grønn oils are responsible, zero-waste, ready-to-use oils from Benoit Dewitte. Oils just as we would make them ourselves: intense in flavor and deep in color. These Grønn oils can be found chilled in the vegetable section.

Ingredients

100gWhite wine
250gMussel jus
100gfinely chopped shallot
200gButtermilk
30gfresh dill
250gSour cream

10gSushi vinegar
50gFresh butter
50gDill oil

Preparation

  1. Bring the mussel jus, sour cream, buttermilk, shallot, white wine, and fresh dill to a boil and reduce by half.
  2. Strain the sauce through a fine sieve.
  3. Finish with the cold butter until you have a creamy, airy jus.
  4. Add the sushi vinegar and dill oil.
  5. Season with salt to taste.
