
Chocolate kisses with mandarin
Silvia protein powder is a mix based on egg white and sugar (Italian meringue in powder form).Easy to whip up with (cold) water and, for example, to use as flambé foam.Ingredients
150gmandarin purée
Dark chocolate
Cocoa butter
25gsanatine
butter cookies
300gSilvia egg white powder
Preparation
- Soak the sanatine in the mandarin puree (5 minutes). Then heat to 50°C.
- Add silvia and whip until airy in a KitchenAid with a whisk attachment.
- Pipe this onto the cookies and place in the freezer (keep them there until use).
- Melt dark chocolate with a little cocoa butter, so the chocolate is slightly thinner.
- Dip the 'kisses' in the melted chocolate and let them thaw before serving.
