Preparation

  1. Mix all ingredients in the blender and strain through a fine sieve.
  2. Pour into a 1-liter siphon, shake well, and charge with two gas cartridges.
  3. Dispense à la minute into small bowls and serve with the shrimp skewers.
  4. Decorate with smoked paprika powder and sprigs of lemon verbena.
