Cornetto of orange with yogurt-honey ice cream

Cornetto made from orange, filled with a gel of strawberries and wild honey, yogurt-honey ice cream and topped with crunchy honey pops.

Ingredients

Fruit leather orange
Cone

200gSugar
350gWater
25gGlucose
100gCretan honey
Juice of 1 lime
200gGreek yogurt
50gcream (unsweetened)
110gMascarpone

250gStrawberries
125gWild herb honey
25gSugar
5gAgar
Basil oil

Honey pops

Preparation

  1. Cut the fruit sheets to the desired size.
  2. Fry them for a few seconds at 160°C.
  3. Shape the cone directly from the fryer.

For 2 Ninja cups

  1. Heat the sugar, water, and glucose.
  2. Mix the honey, yogurt, lime juice, cream, and mascarpone in the KitchenAid.
  3. Add the sugar-water-glucose mixture to the other ingredients.
  4. Pour the mix into the cups and freeze for at least 24 hours.
  5. Process in the Ninja.

  1. Mix all ingredients (except basil oil).
  2. Blend well with a hand blender and let cool until it is gelled.
  3. Process in the food processor with basil oil to taste and transfer to a piping bag.

  1. Fill the cornettos with gel, the ice cream, and top with the honey pops and cress to taste.
