Preparation
- Slice the baguette.
- Mix olive oil with salt, pepper, and herbs to taste and brush both sides of the slices with it.
- Grill on the barbecue.
- Use a peeler to shave long ribbons of zucchini.
- Sprinkle the long zucchini ribbons with salt and let them sit for about 30 minutes.
- Rinse the zucchini ribbons with water, pat dry, and season with pepper, salt, and lemon zest.
- Char the zucchini ribbons with a blowtorch.
- Top the crostini with stracciatella and the zucchini ribbons.
