Burrata stracciatella is made by first preparing mozzarella cheese. The mozzarella is then finely chopped or torn and mixed with fresh cream. This creamy mozzarella, the heart of burrata, is insanely delicious. It is also called 'savory whipped cream'. Delicious as a cream with roasted vegetables or combined with a carpaccio of yellow and green zucchini, a bit of pesto, sunflower seeds, and tarragon in a starter.
