Dragonfruit, chocolate & yoghurt
This dessert consists of a white chocolate cream, a yogurt & dragon fruit espuma, raspberry sorbet, and marinated dragon fruit.Serving in and on glass is completely back. Stylish, authentic, a bit retro, and it really makes dishes shine. This holiday season, we are serving desserts in the glass. The sweet temptation has never been so visible.

Raspberry sorbet

Preparation
- Mix the water with the gelatin powder.
- Heat the milk and glucose syrup and dissolve the gelatin mixture in this.
- Melt the chocolate and pour the mixture over the chocolate.
- Make an emulsion with a hand blender.
- Add the cream and mix well.
- Pour into glasses and let set in the fridge until use.
- Mix the 100 grams of water with the dragon fruit powder.
- Mix the 15 grams of water with the gelatin powder.
- Heat the cream with the sugar.
- Dissolve the gelatin mixture in this.
- Remove from the heat and add the yogurt.
- Finally, add the dragon fruit water.
- Mix everything well.
- Strain the mixture and transfer to a siphon with two cartridges.
- Keep chilled until use.
- Marinate some dragon fruit cubes in kumquat liqueur.
- Place a scoop of raspberry sorbet on the white chocolate cream.
- Spoon some marinated dragon fruit cubes on top.
- Finally, pipe the espuma on and dust with some dragon fruit powder.
