Hot apple crumble & custard

Warm apple crumble with almond custard, meringue and crumble.

Serving in and on glass is completely back. Stylish, authentic, a bit retro, and it really makes dishes shine. This holiday season, we’re serving desserts in the glass. The sweet temptation has never been so visible.

Ingredients

50gSugar
30gCream powder
160gEgg yolk
500mlRoasted almond milk

2Cinnamon powder
120gFlour
100gOat flakes
140gLight brown sugar
Grated nutmeg
100gMelted butter

Cinnamon sugar
Butter
Goudreinet apples

150gApple juice
300gSilvia flambé egg white powder

Preparation

  1. Heat the almond milk.
  2. Mix the egg yolk with the cream powder and sugar.
  3. Pour the warm milk over this.
  4. Heat until the custard has the thickness of pudding.
  5. Pour out the custard and cover with foil to prevent a skin from forming.

  1. Mix everything into a crumbly dough, place briefly in the fridge.
  2. Crumble the dough over a baking tray and bake for about 10 minutes at 175°C.

  1. Peel the apples and cut into cubes (not too fine).
  2. Mix the apple cubes with the cinnamon sugar.
  3. Briefly sauté the apple cubes so the sugar lightly caramelizes, but the apple still has some bite.

  1. Mix both components and whisk until a fluffy meringue forms.
  2. Pipe a rim of the meringue onto the glass.
  3. Flambé this with a blowtorch.
  4. Spoon the warm apples into the bottom of the glass.
  5. Add warm custard on top and generously finish with the crumble.
