
I’m dreaming of a white Christmas
Dessert based on skyr mousse and crystallized white chocolate.This recipe was served during the Chef's Table at HANOS Hengelo on December 10, 2022.
Ingredients

200mlWhipped cream
0.5Lime
450gskyr natural
45gHoney
silicone mold tourbillon 28
0.5vanilla pod
220gGranulated sugar
100gWater
200gWhite chocolate
crispearls white
dessert espuma Italian meringue
jasmine blossom
white chocolate bross
Preparation
- Heat half of the cream with half a vanilla pod, the honey, and zest of half a lime.
- Melt the gelatin in the cream and add the remaining cold cream. Add the cream to the skyr and gently mix until smooth.
- Remove the vanilla pod and pour into the molds. Let set in the freezer and remove from the mold. Defrost on the plate before use.
- Heat the sugar and water to 145 degrees.
- Meanwhile, melt the white chocolate.
- Pour the warm sugar syrup over the chocolate and stir until a nice crumble forms.
- Place the skyr mousse in the center of the plate and garnish with the rest of the ingredients around the spiral.
