
Eclair cheesecake and orange
Eclair filled with 'steamed' cheese and orange gel.The éclair is made according to the basic recipe, which you can view here.

Silver spray

Preparation
- View the basic recipe or check out our ready-made éclairs below.
- Mix all the ingredients into a nice smooth mixture.
- Pour the mixture into molds and steam at 82°C with 100% steam for about 25 minutes.
- Freeze the mixture in the mold.
- Heat the orange juice and add the kappa.
- Bring the mixture to a boil and then let it cool.
- Dip the cheesecake in the orange jelly and let it cool.
- Cut the fruit sheets to the desired size and fry them for a few seconds at 160°C.
- Shape the sheets immediately after frying and spray the orange spirals of fruit sheets with silver spray once they have cooled.
- Cut the top off the éclair and place the cheesecake inside.
- Finish with an orange spiral and orange powder.
