Preparation

- Loosen the mascarpone with the espresso and sugar.
- Whip the cream until it has the thickness of yogurt.
- Mix the whipped cream with the mascarpone-espresso mixture until smooth.
- Transfer the mixture to a piping bag and chill.
- Cut the top off the éclair.
- Fill the éclairs with the mixture (tiramisu) and top with dollops of meringue.
- Caramelize the meringue with a blowtorch and decorate with grated coffee beans and coffee beans.
