1Confit duck leg
240mlOrange juice
10gGarlic puree
10gGinger puree
240mlChicken broth
65gHoney
30mlSushi vinegar
Preparation
- For the sauce, sauté the garlic and ginger puree in a little oil.
- Add the remaining ingredients and let simmer gently until the sauce has reduced slightly.
- Let the orange buns thaw and cut in half.
- Spread both halves with lemon-pepper mayonnaise.
- Shred the duck meat from the bone and sear it in a hot pan without fat.
- Add a splash of the orange sauce and heat the meat thoroughly so the sauce is absorbed.
- Top the bun with some romaine lettuce, place the warm duck meat on top, and garnish with the crumble.
