Flamenquín

A classic from Córdoba that always scores. Thin veal filled with Serrano and Manchego, tightly rolled and fried until golden brown.

Ingredients

100gAll-purpose flour
Lemon
Aioli
100gPanko
4Veal slices (approx. 120 grams each)
4Slices of Serrano ham (approx. 10 grams each)
2Eggs (M) (beaten)
4Slices of Manchego (approx. 5 grams per slice)
Salad
Fries

Preparation

  1. Pound the meat between foil to a thickness of about 3 mm.
  2. Season with pepper and salt.
  3. Top each slice with Serrano and cheese and roll up tightly. Secure with toothpicks.
  4. Coat the rolls successively in flour, egg, and panko, pressing well.
  5. Let set in the refrigerator for about 1 hour so the coating adheres well.
  6. Fry at 175°C, about 3 minutes per side, until golden brown and cooked through.
  7. Serve with aioli, lemon, fries, and salad.
