Flamenquín
A classic from Córdoba that always scores. Thin veal filled with Serrano and Manchego, tightly rolled and fried until golden brown.Ingredients
100gAll-purpose flour
Lemon
Aioli
100gPanko
4Veal slices (approx. 120 grams each)
4Slices of Serrano ham (approx. 10 grams each)
2Eggs (M) (beaten)
4Slices of Manchego (approx. 5 grams per slice)

Preparation
- Pound the meat between foil to a thickness of about 3 mm.
- Season with pepper and salt.
- Top each slice with Serrano and cheese and roll up tightly. Secure with toothpicks.
- Coat the rolls successively in flour, egg, and panko, pressing well.
- Let set in the refrigerator for about 1 hour so the coating adheres well.
- Fry at 175°C, about 3 minutes per side, until golden brown and cooked through.
- Serve with aioli, lemon, fries, and salad.
