300mlFresh cold water
2kgMed Cuisine precooked chickpeas
454gMed Cuisine tahini
chopped parsley
Extra virgin olive oil

Med Cuisine za'atar spice mix
Preparation
- Place 1900 grams of cooked chickpeas in a food processor (reserve 100 grams for garnish) and blend at maximum speed for 60 seconds.
- Add the cold water and blend again for 60 seconds.
- While the machine is running, add the tahini and blend until well combined.
- Continue blending for another 2 minutes until a smooth, creamy texture is achieved.
- Spoon 150-200 grams of hummus onto a flat plate and spread it out.
- Add 3-4 tablespoons of cooked chickpeas (preferably rinse them first).
- Drizzle with olive oil and garnish with a pinch of za'atar and chopped parsley.
