Fritto misto

You get the fish nice and crispy by dusting them with semola (semolina). This keeps them crunchier.

Ingredients

semola semolina
smelt
squid tentacles
frying oil

Preparation

  1. Dredge various small fish in semola (we used smelt and squid tentacles). Slightly frozen works best.
  2. Fry in hot oil until crispy. Preferably do this in a small pan, as semola quickly contaminates the frying oil.
  3. Serve with a suitable dipping sauce.
