Preparation
- Make apple balls with a melon baller.
- Sprinkle with lemon juice.
- Fry in a pan with olive oil and caramelize with a little sugar.
- Chill.
- Put 200 grams of sugar, the pandan liqueur, and the water in a saucepan and bring to 121°C.
- Whip the egg whites with the remaining 80 grams of sugar until fluffy.
- While mixing, slowly add the sugar mixture.
- Fill a piping bag.
- Pipe a small amount of pandan foam onto an apple ball and torch with a blowtorch.
