
Smoked salmon prepared at the table
Salmon loin, traditionally prepared Japanese style, live at the table.Ingredients
450gsmoked salmon loin
100gTomasu soy sauce
10gTrout roe
150gwakame
1units.itemscooking Calvados
1units.itemssmoke box
Preparation
- Marinate the salmon loin with Tomasu soy sauce.
- Seared the salmon on one side with a crème brûlée torch for about 1 minute, until nicely browned.
- Light the oven as shown in the video with the gelified calvados.
- Place the salmon on top.
- Garnish with the remaining ingredients, starting with the wakame and placing trout roe on top.
