Smoked salmon prepared at the table

Salmon loin, traditionally prepared Japanese style, live at the table.

Ingredients

450gsmoked salmon loin
100gTomasu soy sauce
10gTrout roe
150gwakame
1units.itemscooking Calvados
1units.itemssmoke box

Preparation

  1. Marinate the salmon loin with Tomasu soy sauce.
  2. Seared the salmon on one side with a crème brûlée torch for about 1 minute, until nicely browned.
  3. Light the oven as shown in the video with the gelified calvados.
  4. Place the salmon on top.
  5. Garnish with the remaining ingredients, starting with the wakame and placing trout roe on top.
