
Steamed oysters
We lightly steam the oysters and serve them in two ways: with a sauce of lemon and yogurt, and with a sauce of red wine vinegar and red onion.Ingredients
Red wine vinegar
citrus vinaigrette
Red onion
Oysters
Full-fat yogurt
Preparation
- Place the oysters in a steam basket (with lid) and set it over a pan of boiling water. Steam for about 6 minutes until the oysters open.
- Mix citrus vinaigrette with full-fat yogurt to taste for a fresh sauce.
- Reduce red wine vinegar by half until slightly syrupy, then add finely chopped red onion at the end.
