Spicy Portuguese oysters

Oysters with a spicy vinaigrette of jalapeño, onion, and acidity.

Ingredients

Sea fennel
1white onion
1Lime juice
2Green jalapeño peppers
2Red jalapeño peppers
5White wine vinegar
12Gillardeau Spéciale Joséphine la Distinguée

Preparation

  1. Open the oysters using an oyster knife.
  2. Remove the seeds from the jalapeños.
  3. Finely chop the jalapeños and white onion.
  4. Squeeze a lime.
  5. Mix the chopped ingredients with white wine vinegar and the lime juice.
  6. Let this mixture marinate for 15 minutes to allow the flavors to infuse.
  7. Spoon some of the spicy vinaigrette over each oyster and optionally garnish with sea fennel.
