Filled speculaas

Filled speculaas is a traditional delicacy. Richly filled with almond paste between layers of spiced speculaas.

Ingredients for 10 people.

Ingredients

whole almonds
190gBrown soft sugar
225gUnsalted butter
375gWheat flour
5Euroma Speculaas Spices

Preparation

  1. Mix the wheat flour, caster sugar, butter, speculaas spices, a pinch of salt, and 2 tbsp ice-cold water into a smooth dough.
  2. Let rest covered for 30 minutes in the refrigerator.
  3. Preheat the oven to 175°C.
  4. Roll out the dough to 1 cm thick, place on a baking tray lined with baking paper, and garnish with the almonds.
  5. Bake the speculaas for 25 minutes until done.
