500gMilk
10gSoaked leaf gelatin
300mango liqueur
200gEgg yolk
600gsemi-whipped cream
Mango sorbet
silicone egg mold
Exotic fruit crumble
Preparation
- Heat the milk and egg yolk in a thermoblender at 85°C until thickened.
- Add the gelatin and mango liqueur.
- Let the mixture blend for a moment.
- Let cool to 35°C.
- Fold the semi-whipped cream into the mixture.
- Pipe the filling into the silicone molds and freeze.
- Cut the frozen eggs in half.
- Use a melon baller to scoop out a cavity and place a ball of mango ice cream inside.
- Serve the eggs thawed, but still chilled.
- Serve them on an exotic fruit crumble.
