Gnocchi Caprese

Fried gnocchi served with cashew crunch and arugula.

Ingredients

Oil
Cashew crunch
Caprese gnocchi
Pesto
Cream
Garlic
Arugula
Basil cress

Preparation

  1. Make garlic oil by blending garlic and oil.
  2. Mix the pesto (see basic green pesto recipe below) with garlic oil, cream, cashew crunch and heat gently.
  3. Fry the gnocchi for about 2.5 minutes.
  4. Let the gnocchi 'drain' for about 1 minute.
  5. Serve the gnocchi with the sauce, freshly chopped cashew crunch, and arugula.
