
Golden pineapple dessert

Preparation
- Clean the pineapple and cut into even pieces.
- Melt the clarified butter and fry the pineapple pieces in it.
- While frying, sprinkle with fine sugar and let caramelize.
- Then deglaze with a splash of rum.
- Store the pineapple with the liquid in a container until use.
- Bring the cream to a boil.
- Then pour over the chocolate with compound and stir well until a smooth emulsion forms.
- Cool and whip until airy in the food processor before use.
- Whip cream with a scoop of salty caramel until soft peaks form.
- Melt 500 grams of orange chocolate au bain-marie.
- Mix in two to three tablespoons of granola.
- Pour out (about 5 cm thick) and let harden.
- Chop into small pieces to make a crumble.
- Place the pineapple at the bottom of the pineapple bowl and top with a generous scoop of vanilla ice cream.
- Pipe dots of ganache and salty cream on top using a piping bag.
- Finish with the orange-coconut crumble.
