
Greek pita with veal brisket and truffle mayonnaise

Veal brisket comes from the shoulder of the calf and is a lean cut of meat with a small fat edge and wonderfully fine meat fibers.

Caesar dressing

Preparation
- Cut a slice of the veal chuck and fry in a pan.
- Warm the pita breads in the oven.
- Toss the salad with the Caesar dressing.
- Slice the chuck and place on the pita bread.
- Add the salad and serve with truffle mayonnaise*.
