Light guacamole made from green peas

Airy guacamole made from green peas.Green peas are harvested unripe, so not all sugars have been converted into starch, which gives them their delicious, slightly sweet taste. The harvest period is short, but fortunately in the kitchen we can also work well with frozen green peas.

Ingredients

250gblanched green peas
200gfresh avocado
20mlChardonnay vinegar
20mlMirin
Lime juice
Grape seed oil
2Tarragon leaves
1Egg white
Salt to taste

Preparation

  1. Mix all the ingredients, except the oil, in a blender.
  2. Once everything is well mixed, gradually add grape seed oil while blending until a light, airy emulsion forms.
