
Coconut mochi, coconut & rum mousse, and coconut foam shards
Delicious dessert of coconut mochi, mousse and rum. Ideal for the holidays or special occasions.This dish consists of:
- Mochi ice cream coconut
- Mousse of coconut and rum
- Coconut meringue shards
Ingredients
115gWhite chocolate
35gRum
3gleaf gelatin
300gCoconut cream 24%
100mlCoconut water
Desiccated coconut
200gSilvia egg white powder
Coconut chips

Preparation
- Soak the gelatin sheets in water.
- Heat the coconut cream with the rum and dissolve the gelatin in it.
- Pour this mixture over the white chocolate and mix everything well.
- Let the mixture cool and then whip until light and airy.
- Spoon the mousse into a piping bag.
- Mix the egg white powder with the coconut water and whip until airy in, for example, a KitchenAid with a whisk.
- Spread the mixture thinly on a silicone baking mat.
- Sprinkle the grated coconut over it.
- Place in an oven at 80°C and let dry until crisp (about 3 hours).
- Pipe the coconut and rum mousse onto a plate.
- Place a coconut mochi ice cream in it.
- Arrange the meringue shards around it.
- Garnish with coconut chips.
