Coconut parfait with pineapple smoothie and atsinacress

An exotic coconut parfait combined with a fresh pineapple smoothie and a subtle touch of atsinacress. Perfect as a light and refined dessert.Recipe for approximately 10 smoothies.

Ingredients

100mlCoconut milk
100mlMalibu
400mlDebic Parfait

1kgFrozen pineapple pieces
100mlMalibu
500mlPineapple juice
1units.itemsAtsina cress tray

Preparation

  1. Whip the parfait until light in the planetary mixer and mix with the coconut milk and Malibu.
  2. Transfer to a piping bag with a plain nozzle and fill the glasses halfway.
  3. Reserve in the freezer for 4 hours.

  1. Blend all ingredients into a nice smooth smoothie.
  2. Add extra pineapple juice if the smoothie is too thick.

  1. Pour the smoothie à la minute over the parfait and garnish with a piece of pineapple.
