
Lahmacun Duck Döner

Mint
6gCumin powder
1Duck breast
Flat-leaf parsley
300gTomato pulp
Shawarma spice blend
1Lahmacun
Spring onion
Curly parsley
Olive oil
Yogurt
Salt
Lemon juice (fresh)
Preparation
- Season the duck breast with the shawarma spices and cook sous-vide at 62°C for 40 minutes.
- Cool down and slice the breast into thin pieces.
- Mix the tomato with the chicken stock and cumin.
- Reduce to a nice thick sauce.
- Mix the mint, parsley, and spring onion, and dress with olive oil and lemon juice.
- Loosen the yogurt (amount to taste) with a little salt.
- Fry the duck breast in oil, warm the lahmacun.
- Assemble the lahmacun with the duck breast, herb salad, and fresh yogurt sauce.
