Loaded Duck Fries

Loaded with character: fries, confit duck, atjar and cheddar melt together into the ultimate sharing dish.

Ingredients

200gChicken broth
garlic sauce
Confit duck
Fries
Atjar
6gCumin powder
Lime zest
300gTomato peeled (pulp)
Cheddar
Thai basil
Cassava

Preparation

  1. Mix the tomato with the chicken stock and cumin. Reduce to a nice, thick sauce.
  2. Heat the confit duck together with a bit of the tomato sauce.
  3. Fry the fries until golden brown and crispy.
  4. Spread the fries on a platter or plate and top with cheddar and warm duck.
  5. Finish with garlic sauce, atjar, cassava, and fresh basil.
