
Brioche Duck Rendang Burger
This rendang burger with duck on a light brioche bun is a flavor bomb of spicy depth and smooth creaminess.Ingredients
Panko
500gConfit duck
60mlCoconut cream 24%
8gFresh coriander, finely chopped
2Egg yolks
6.5gFine salt
10gRendang spices
Brioche buns
Pan sucre
Atjar
Coriander, finely chopped
Lime aioli
Preparation
- Mix the confit duck with rendang spices, coconut cream, egg yolks, fresh coriander, and salt.
- Add a generous amount of panko and knead well.
- Form burgers of approx. 80 grams and press them into extra panko.
- Freeze the burgers for later use.
- Briefly bake the brioche buns (see packaging).
- Fry the burgers.
- Serve with pan sucre, lime aioli, coriander, and atjar.
