Brioche Duck Rendang Burger

This rendang burger with duck on a light brioche bun is a flavor bomb of spicy depth and smooth creaminess.

Ingredients

Panko
500gConfit duck
60mlCoconut cream 24%
8gFresh coriander, finely chopped
2Egg yolks
6.5gFine salt
10gRendang spices

Brioche buns
Pan sucre
Atjar
Coriander, finely chopped
Lime aioli

Preparation

  1. Mix the confit duck with rendang spices, coconut cream, egg yolks, fresh coriander, and salt.
  2. Add a generous amount of panko and knead well.
  3. Form burgers of approx. 80 grams and press them into extra panko.
  4. Freeze the burgers for later use.

  1. Briefly bake the brioche buns (see packaging).
  2. Fry the burgers.
  3. Serve with pan sucre, lime aioli, coriander, and atjar.
