
Duck satay and peanut-coconut sauce

Preparation
- Cut the duck breast into cubes of the desired size.
- Vacuum seal with garlic, oil, soy sauce, sesame oil, and ginger syrup. Marinate for at least 12 hours.
- Mix the peanut butter with chicken stock, coconut cream, star anise, and kaffir lime leaf. Heat the sauce (do not boil).
- Strain the sauce and season with lime juice.
- Thread the marinated duck cubes onto skewers and grill them, for example on the BBQ.
- Warm the peanut coconut sauce before serving.
- Serve the duck satay with the warm sauce and garnish with coriander, sesame, and fried onions.
