Duck satay and peanut-coconut sauce

Satay next level: marinated duck skewers with creamy peanut-coconut sauce.

Ingredients

50gOil
30gSoy sauce
1garlic clove
15gGinger syrup
250gChicken broth
10gSesame oil
400gDuck breast
250gSkippy peanut butter
2units.itemsStar anise
400gCoconut cream 24%
Lime
Sesame seeds
2.5Djeroek poeroet
Fried onions
Finely chopped coriander

Preparation

  1. Cut the duck breast into cubes of the desired size.
  2. Vacuum seal with garlic, oil, soy sauce, sesame oil, and ginger syrup. Marinate for at least 12 hours.
  3. Mix the peanut butter with chicken stock, coconut cream, star anise, and kaffir lime leaf. Heat the sauce (do not boil).
  4. Strain the sauce and season with lime juice.
  5. Thread the marinated duck cubes onto skewers and grill them, for example on the BBQ.
  6. Warm the peanut coconut sauce before serving.
  7. Serve the duck satay with the warm sauce and garnish with coriander, sesame, and fried onions.
