This recipe is for 6 rings and the dish consists of rings and coating.

Ingredients

silicone mold n.6 promise 65
2.5gleaf gelatin
250gCream
150gcoconut purée

callets gold
gold spray for chocolate
mycryo cocoa butter in powder form

Preparation

  1. Heat the cream with the sugar and coconut purée.
  2. Soak the sheet gelatin and dissolve it in the mixture.
  3. Pour the entire mixture into the molds and let cool.
  4. Freeze the cooled molds.

  1. Melt the gold chocolate with 10% cocoa butter to make it a bit thinner.
  2. Place the frozen rings on a wire rack and pour the melted chocolate over them.
  3. Spray some gold spray over them and let thaw before serving.
  4. Garnish the dish as desired.
