2.5gleaf gelatin
250gCream 35%
150gcoconut purée
callets gold
gold spray for chocolate
mycryo cocoa butter in powder form
Preparation
- Heat the cream with the sugar and coconut purée.
- Soak the sheet gelatin and dissolve it in the mixture.
- Pour the entire mixture into the molds and let cool.
- Freeze the cooled molds.
- Melt the gold chocolate with 10% cocoa butter to make it a bit thinner.
- Place the frozen rings on a wire rack and pour the melted chocolate over them.
- Spray some gold spray over them and let thaw before serving.
- Garnish the dish as desired.
