115glime chocolate
35gLimoncello
3gleaf gelatin
300gCream 35%
1Lemon
silicone mold mini lemon
Callebaut ice white
lemon cookies
yellow food coloring
Lime
Lemon curd
Preparation
- Warm the cream with the zest of 1 lemon and the Limoncello.
- Dissolve the gelatin in this and pour the mixture over the chocolate.
- Mix everything together well.
- Pour the chocolate into the molds and freeze.
- Melt some Callebaut ice chocolate with a drop of yellow coloring.
- Dip the frozen limes into the melted Callebaut ice chocolate and let thaw.
- Break the lemon cookies and place some pieces on a plate.
- Pipe lemon curd between the cookie crumbs.
- Place the Limoncello-tjes on top and garnish with some grated lemon and lime zest.
