Silvia protein powder (28623456) is a mix based on egg white and sugar (Italian meringue in powder form).Easy to whip up with (cold) water and, for example, to use as flambé foam.

Ingredients

300gSilvia egg white powder
150gWater
50gsanatine
50gcompound

Preparation

  1. Mix cold water with the sanatine. Heat to 50°C.
  2. Combine this with silvia and the compound.
  3. Whip until airy in a KitchenAid with a whisk.
  4. Pipe lines onto a tray with sugar and let set outside the fridge.
