Melon sangria

This recipe was presented during the Chef's Table at the sneak preview of HANOS Maastricht on July 19, 2022.

Ingredients

1ltempranillo red wine
2oranges, juice
1Lemon juice
3Powdered sugar
1Cointreau
1cinnamon stick (broken)
slice of lemon
watermelon (sliced)
slice of orange
Raw ham

Preparation

  1. Mix the wine with the juice of the oranges and lemon, powdered sugar, and Cointreau to make sangria.
  2. Put the watermelon in vacuum bags and add a splash of the sangria.
  3. Place a slice of orange, lemon, and a piece of cinnamon on top.
  4. Vacuum so the sangria infuses into the melon.
  5. Cut the melon into cubes and top with raw ham.
