Preparation
- Light the barbecue.
- Boil the corn for 10 minutes.
- Drain and let steam dry briefly.
- Grill the corn cobs for 6 to 8 minutes until golden brown. Turn regularly.
- Meanwhile, mix the mayonnaise with 2¬Ω teaspoons Euroma Mexican style BBQ spices.
- Crumble the feta, spread on a plate, and cut the limes into wedges.
- Pick the coriander leaves.
- Rub each cob with a lime wedge.
- Spread all around with the Mexican style mayonnaise and roll in the crumbled feta.
- Sprinkle the corn cobs with some extra Euroma Mexican style BBQ spices and salt if desired.
- Serve the remaining lime wedges and coriander leaves alongside.
