Basil mousse

An airy mousse made with milk, basil, and lemon.

Ingredients

400gWhole milk
a bit of lemon juice
4units.itemsGelatin sheets
30gBasil
Salt

Preparation

  1. Blend in a blender: 400 grams whole milk, 30 grams basil, a little lemon juice.
  2. Rub through a sieve.
  3. Warm a small portion of this liquid and dissolve 4 sheets of gelatin in it (8 grams).
  4. Add this to the rest of the liquid and season with salt.
  5. Let cool in the fridge and just before the mixture starts to set, whip it airy in the Kitchenaid with a whisk.
