
Autumn Eton Mess

100gHoney (Imkergold)
500gbutternut squash
200gWhipped cream (unsweetened)
150gOrange marmalade
100gMascarpone
2Juicing oranges
500gSilvia
250mlWater
20gRosemary
Powdered sugar
1Blood orange
Monin pumpkin spice
Mint
Preparation
- Clean the butternut squash and cut it into small pieces.
- Drizzle the honey over it and cook the pumpkin for 20 minutes at 180°C.
- Whip the cream together with the mascarpone.
- Flavor the cream with the orange marmalade and orange juice.
- Dry the rosemary in the dehydrator for about 4 hours.
- Grind the rosemary without the stem into a powder.
- Whip the silvia together with the water into a firm meringue and add the rosemary powder.
- Pipe the meringue onto mats and dry at 60°C in the dehydrator until completely crispy.
- Slice the orange thinly on the slicer and coat both sides with powdered sugar.
- Dry the orange until it is completely crispy.
- Crumble 2/3 of the meringue and add it to the cream.
- Mix gently.
- Put the cream in a nice bowl and spread the pumpkin over it.
- Distribute the remaining meringue on top.
- Insert the dried orange in between.
- Finely chop the mint and sprinkle it over the dessert.
- Finally, sprinkle some pumpkin spice on top.
