Pornstar martini and coffee

Passion fruit, passion-mango crumble with espresso and Pornstar Martini foam. The approximate cost price per person is €1.42.

Preparation

  1. Cook the tapioca in plenty of water until the pearls are transparent.
  2. Rinse until the water is clear.
  3. Dissolve the sugar in the water and add the passion fruit coulis.
  4. Set aside together for 24 hours.

  3. Pipe the passion fruit gel and coffee gel on top.
  4. Pipe the Pornstar Martin foam on top.
  5. Finish with the two crumbles and the tuiles.
