Oyster with lardo, avocado and lemon vinaigrette

A refined combination of briny oyster, creamy avocado and fresh lemon vinaigrette, wrapped in paper-thin lardo.

Ingredients

lardo nostrana
citrus vinaigrette
avocado hass
oyster
mustard cress

Preparation

  1. Open the oyster and detach it.
  2. Drain the liquid and wrap the oyster in a slice of lardo nostrana, place a slice of ripe avocado on top, and spoon over the citrus vinaigrette.
  3. Garnish with a few sprigs of mustard cress.
  4. Serve in the oyster shell.
