A classic oyster preparation with a refined vinaigrette of shallot and Cabernet Sauvignon red wine vinegar.Ingredients

Red wine vinegar
Lime

Preparation
- Finely chop the shallot and mix with the red wine vinegar.
- Open the oysters and cut them loose, drain the liquid.
- Place them back in the shell and spoon a little red wine vinegar with shallot over them.
- Finish with a little freshly ground pepper.
- Present this dish in the oyster shell.
