
Celeriac fritters & game stew

Ingredients
50gWhole egg
130gSelf-raising flour
Salt to taste
265gCeleriac purée
2Wild stew (braised)
Preparation
- Cook fresh celeriac until done and blend into a puree.
- Mix 265 grams of this puree in the food processor with the self-raising flour and the whole egg.
- Finally, add the game stew and blend briefly so it is mixed but not too fine.
- Season with salt.
- Use an ice cream scoop to form small balls of the batter and fry in oil until done.
