Celeriac fritters & game stew

Ingredients

50gWhole egg
130gSelf-raising flour
Salt to taste
265gCeleriac purée
2Wild stew (braised)

Preparation

  1. Cook fresh celeriac until done and blend into a puree.
  2. Mix 265 grams of this puree in the food processor with the self-raising flour and the whole egg.
  3. Finally, add the game stew and blend briefly so it is mixed but not too fine.
  4. Season with salt.
  5. Use an ice cream scoop to form small balls of the batter and fry in oil until done.
