Onion Pakora
These fried onion fritters are perfect as a snack or side dish. Recipe by Paulami Joshi. Serves 4.Pakora (Indian fritter) is made in many variations.Ingredients
2Large onions, in fine half rings
10gCoriander, roughly chopped
110gchickpea flour
1units.theelepelGround cumin
3units.theelepelGaram masala
1Rawit pepper, chopped
0.5units.theelepelTurmeric powder
1.5units.theelepelSalt
Sunflower oil
Mint chutney
Tamarind chutney
0.5units.theelepelBaking soda
0.5units.theelepelChili powder
Preparation
- In a large bowl, mix the onion, rawit chili, coriander, chickpea flour, chili powder, turmeric powder, cumin powder, garam masala, salt, and baking soda. Add 3 tablespoons of water and mix the ingredients well with your hands until combined.
- Heat a generous layer of oil in a (frying) pan to 130°C. Shape the mixture, using 2 tablespoons if needed, into firm fritters about 5 centimeters in diameter and 1½-2 centimeters thick. Let rest briefly and repeat until all the mixture is used.
- Fry the fritters in batches for 6-8 minutes until golden brown and cooked through. Remove from the oil with a slotted spoon and drain on kitchen paper.
- Serve the onion fritters with mint chutney or tamarind chutney.
