Mayonnaise
Preparation
- Deep-fry the thick fries until golden brown.
- Mix salt with some lemon pepper and sprinkle this over the fries.
- Blanch the parsley and basil and immediately cool in ice water.
- Put the parsley, basil, garlic, smoked cashew nuts, and Parmesan cheese together with the olive oil in the blender and blend to the desired texture.
- Mix some of the herb pesto into mayonnaise.
- Pipe this over the fries.
- Grate some lemon zest and fresh Parmesan cheese over the top.
