Redefine Meat Minced in a steamed bun.

10gFinely chopped ginger
100gChopped red onion
15gChopped spring onions

250gRedefine Meat minced
1units.itemsFinely chopped chili pepper

Preparation

  1. Mix the water, sugar, and yeast in a bowl, cover, and let stand for about 10 minutes.
  2. Put the flour, salt, oil, and baking powder in the bowl of a stand mixer.
  3. Gradually add the yeast mixture and knead until a smooth dough forms, about 5 minutes.
  4. Shape the dough into a ball and place in a clean bowl. Cover with plastic wrap and let rise for about an hour and a half.
  5. Once the dough has risen, punch it down.
  6. Divide and shape the dough into balls of 50 grams each.
  7. Place the shaped dough on a baking sheet and cover with a damp towel. Let rest for 15 minutes.
  8. Flatten each dough ball and shape into an oval. Place a square of baking paper over half of each oval and fold in half to form a half circle.
  9. Place the buns on a baking sheet lined with baking paper, cover, and let rise for 30-40 minutes until almost doubled in size.

  1. Heat a skillet or wok for about one minute over high heat.
  2. Once the pan is hot, add the oil, ginger, garlic, chili, and onions.
  3. Stir-fry over high heat for about 30 seconds.
  4. Add the Redefine Meat Mince and cook, stirring constantly, for another 2 minutes until almost fully cooked.
  5. Add the soy sauce and cook for another 30 seconds, until most of the cooking liquid has almost completely evaporated.
  6. Add the herbs, sugar, and some lime juice, and mix well.
  7. Before serving, spread each steamed bun with, for example, vegan spicy mayonnaise and fill the bun with the mince filling.
